We offer fantastic bronze fresh free range turkeys, reared in County Down, Northern Ireland. Perfectly matured to give a delicate tenderness, these pasture fed turkeys develop a delicious flavour from being allowed to roam and graze on 160 acres of fresh grass. Grown to maturity slowly for best flavour, our free range bronze turkeys are reared especially for Christmas, and are ready for sale as a fresh bird only in December.  

Our bronze turkeys are from specialist heritage turkey Bronze stock, but it's not just their aristocratic pedigree make these birds the choicest turkeys available. The birds feed on a diet of grains, wheat, as well as a high percentage of native grasses, seeds and insects.  Each bird is plucked and processed by hand to maintain the highest quality.  This results in a superb bird with a naturally firm and moist meat, with an authentic deep slightly gamey turkey flavour.  

Our free range Turkeys are now grazing on lush grass and will be finished on farm grown wheat in November. Fresh turkeys will be available from mid December onwards.  You can place a pre-order for a fresh free range turkey now. 

All turkeys are oven ready, and include their giblets in a separate sealed bag.

Please note fresh poultry has a 4 day refrigerated shelf life, so any bird collected before 22nd December will have to be put in your freezer when you get it home to store it until Christmas.

Fresh poultry has a short shelf life.  All the free range poultry we sell has been game hung for up to 10 days prior to plucking and cleaning out to intensify the flavour. 

The shelf life of oven ready poultry once it has been cleaned out and dry plucked is as follows:

Fresh turkeys 4 days from cleaning and plucking

Fresh chickens 4 days from cleaning and plucking

Ducks 4 days from cleaning and plucking

Geese 4 days from cleaning and plucking

Partridge, quail, game birds - the shelf life is set by the producer when they pack the product - it varies by product but averages 4-5 days from packing.

Please note: the natural shelf life of these poultry products as shown above means that any bird collected or delivered before 22nd December will need to be frozen on receipt in order to keep it safely until Christmas. Birds delivered or collected before 22nd December do not have enough shelf life to be stored in a refrigerator until Christmas Day. 

Fresh poultry is a highly perishable product and will have a use by date on the label.  It is essential to keep all poultry refrigerated (really cold to the touch) from the moment you buy it until you cook it.  Fresh poultry must be transported from the shop in a chill bag to keep it very cold and must be put in a refrigerator within 2 hours of purchase.  Remove the outer plastic bag before storing your poultry in the fridge and store the poultry in a covered dish on the bottom shelf of the fridge.  Fresh poultry must be stored in a refrigerator running at 2 degrees C or colder until the use by date and must be cooked on or before the use by date. Alternatively fresh poultry can be put into a freezer as soon as you buy it, or before the use by date.  Once cooked chicken, turkey, goose and duck has a shelf life of 2 days in a refrigerator.

To safeguard everyone we have changed our Christmas farm shop arrangements to eliminate face to face contact, while still supplying you with a delicious Christmas dinner. 

You can place your order online, or if you prefer you are welcome to call us and we will be happy to place the order over the phone. We accept credit or debit cards over the phone and on our online site.

These are the dates when you can collect any products you order from THIS website at the farm. Please note : these collection dates and arrangements are for products ordered from this special Christmas website www.pheasantshillfarmchristmas.com only.

We provide local delivery with our own vehicles and drivers on Saturday to Belfast, Holywood, Lisburn and Moira.   

Throughout the year we deliver to the whole of Ireland, both Northern Ireland and the Republic of Ireland, and the whole of the United Kingdom including Northern Ireland, Great Britain, the Channel Islands, Highlands, Scottish Islands and Isle of Man using Parcelforce couriers. 

Delivery slots with Parcelforce and Local Delivery slots with our own driver are limited, and we operate a first come first served system.  

Delivery charges

Your delivery charge will be automatically calculated depending on your order value and delivery location and will be shown on the checkout page when you order.  There are minimum order values for delivery which vary depending on the address you want the delivery shipped,to.  If the you do not see a delivery option when you checkout it is because your order is below the minimum amount for your delivery address.  

Please note: Please input your shipping address postcode correctly with a space in the middle e.g. BT30 9BL so that the software can read your address and show you all the delivery options we offer to your address.

Weight of hams, roasts and poultry

We cut  meat as accurately as possible, but as this is a natural product the weight of the product supplied may vary slightly from the weight ordered. It is impossible for the butcher to be absolutely precise when cutting meat.  

The weight of free range turkeys, geese, ducks and chickens cannot be predicted until the Christmas birds are killed in early December. The final weight of these birds varies from year to year because as they are truly free range, their final weight gain depends very much on weather conditions - a cold, damp November will mean the birds do not gain weight as efficiently as in a warm, dry November and the whole batch of birds will all be a little lighter than required by orders.  We sort all birds by size and allocate them to customers strictly on size requested - no one gets preference and the weight differences are shared among all our customers.  Customers who have paid in advance online will not have to pay more if they are delivered or collect a heavier bird than than purchased. If your bird is lighter and therefore cheaper than you purchased, we will refund the difference between the price of the bird supplied and the price of the bird purchased.  

As hams are a natural product produced from the back leg of individual pigs they vary in size depending on the size and weight of each individual pig.  So naturally when we cut a ham in half, the size of each half ham will not be identical.  Our hams are priced in weight bands with an upper and lower weight range of approximately 500 grams per band, for a fixed price per weight range. We will supply you with a ham that falls in the weight band you paid for, but we cannot supply a specific precise weight. 

How much meat to order

Here is a general guide  - based on average portions.

Turkey - allow approximately 1.5 lbs (675 g per person). For turkeys under 14 lb allow approximately 2 lb (900 g) per portion as the bone to meat ratio is higher for smaller birds.

Goose - allow 2 lbs (900 g) per portion. The biggest geese are only about 11-12 lbs (approx 5.5 kg) so if you need to feed more than 6 people you will need 2 geese.

Chicken (whole, on the bone) - allow 1 lb (450 g) per portion.

Duck - allow 1 lb (450 g) portion.

Pheasant - 1 pheasant feeds 2 people.

Guinea Fowl - 1 guinea fowl feeds 4 people. 

Ham, raw. Order 8 oz (225 g) per portion. This will give you 4 oz (110 g) of cooked ham per portion. Ham loses approximately 1/3 to 1/2 its weight in the boiling process, so if you need 2 kg of cooked meat, you should order 4 kg of raw ham.

Meat on the bone (e.g. Rib Roast) - allow 1 lb (450 g) per portion.

Meat, boned (e.g. Rump roast/Topside Roast/Boned Pork Loin) - allow 8 ounces (225 g) per portion.

Meat boned for casserole (e.g. venison casserole pieces) allow 4 oz (110 g) for a casserole with equal vegetable ingredients e.g. mushrooms, onions, carrots. If the casserole meat is just poached in wine without any additional vegetables allow 8 oz (225 g) per portion.
