Please Note: These are EXTRA FATTY hams from more mature pigs. The fat layer on the ham is from 1 inch to 2 inches approximately. To compensate customers for this fat layer we have reduced the price of the ham. The layer of fat makes a delicious protective layer when you are glazing the ham, As these hams are from more mature pigs they should be poached very gently for an extra hour of cooking time compared to our normal free range hams. Un-smoked dry cured ham produced from the herd of free range rare breed Tamworth and Gloucestershire Old Spots pigs we raise on our farm. Our Pheasants Hill Farm free range dry cured ham is trimmed and boned and supplied off the bone. We use a low salt cure (50% less salt than other cures) so we do not recommend soaking overnight. As the hams are produced by old fashioned dry-curing they should be cooked by the traditional method of poaching in a liquid.
As hams are a natural product produced from the back leg of individual pigs they vary in size depending on the size and weight of each individual pig. So naturally when we cut a ham in half, the size of each half ham will not be identical. Our hams are priced in weight bands with an upper and lower weight range of approximately 500 grams, for a fixed price per weight range. We will supply you with a ham that falls in the weight band you paid for, but we cannot supply a specific precise weight.
Chilled Christmas Hams will only be prepared and cut and available to collect at the farm on Thursday 22rd, Friday 23rd and Saturday 24th December. If you would like to collect your ham before these dates, of if you would like your ham to be delivered it will be frozen.
