This year due to the increases in the price of grain we will only be able to confirm the price of our free range geese in late October or early November. If you want to order a free range geese you can place a pre-order for the size you want and pay a small deposit. When we know the final price of these geese we will email you with an invoice for the balance - if you don't wish to order at that stage we will refund your deposit in full.  

This special product is a quick frozen free range goose which has not been hung, is un-aged and is  frozen within 1 day of killing.  This will help to reduce the development of histamine in the meat and is helpful for people who are trying to reduce the histamine content of their diet.  

If goose is your favourite Christmas treat, these free range beauties are just the thing. Matured over a period of six months in 160 acres of lush pastures in County Down, where they roam freely, these magnificent birds produce an abundance of tender, richly flavoured meat. If you haven't tried goose before, you'll find it makes a delicious alternative to the traditional Christmas turkey. 

Roasted Goose is the Christmas dish par excellence.  Goose is similar to duck, with lean, dark, robust meat that pairs wonderfully with a rich, heavy red wine
The meat is quite rich, and so a smaller portion can satisfy, compared to chicken or turkey.  This leaves room for a wide variety of side dishes - in classic French cookery goose is traditionally paired with prunes, but any sharp, fruity flavour - such as apple - helps to balance the richness of the meat.  
There's plenty of fat on a goose, which renders out during roasting.  Make sure you roast your goose on a trivet lifted off the bottom of the roasting pan, and save all your goose fat.  If you render the fat and separate off any solids it can keep well in the fridge for months.  It is the ultimate fat for roast potatoes, or even chips if you are feeling decadent.  
What weight of goose do you need to buy? we recommend roasting 1.5lbs to 2lbs goose weight per person .  Geese vary between 9lbs and 13lbs weight, so they will feed 4 to 6 people.  For more than 6 people you will need 2 geese

Fresh geese are fattened from goslings which life start in July and are grazed on grass and fattened through the Autumn specifically for Christmas eating. They are available for delivery or collection from 1st December.  

Geese are oven ready, and include their giblets in a separate sealed bag.

Parcelforce delivery

We will ship these quick frozen birds out in the week from 5th December to 9th December. The last Parcelforce shipment will be Thursday 9th December for delivery on Friday 10th December. 

Saturday delivery to Belfast, Lisburn, Hillsborough, Holywood, Bangor, Newtownards, Dundonald

These birds can be delivered by our own driver on Saturday 10th December & Saturday 17th December.  

PLEASE NOTE: Poultry shelf life

Fresh poultry has a short shelf life.  All the free range poultry we sell has been game hung for up to 10 days prior to plucking and cleaning out to intensify the flavour. 

The shelf life of oven ready poultry once it has been cleaned out and dry plucked is as follows:

Fresh turkeys 4 days from cleaning and plucking

Fresh chickens 4 days from cleaning and plucking

Ducks 4 days from cleaning and plucking

Geese 4 days from cleaning and plucking

Partridge, quail, game birds - the shelf life is set by the producer when they pack the product - it varies by product but averages 4-5 days from packing.

Please note: the natural shelf life of these poultry products as shown above means that any bird collected or delivered before 22nd December will need to be frozen on receipt in order to keep it safely until Christmas. Birds delivered or collected before 22nd December do not have enough shelf life to be stored in a refrigerator until Christmas Day. 

Fresh poultry is a highly perishable product and will have a use by date on the label.  It is essential to keep all poultry refrigerated (really cold to the touch) from the moment you buy it until you cook it.  Fresh poultry must be transported from the shop in a chill bag to keep it very cold and must be put in a refrigerator within 2 hours of purchase.  Remove the outer plastic bag before storing your poultry in the fridge and store the poultry in a covered dish on the bottom shelf of the fridge.  Fresh poultry must be stored in a refrigerator running at 2 degrees C or colder until the use by date and must be cooked on or before the use by date. Alternatively fresh poultry can be put into a freezer as soon as you buy it, or before the use by date.  Once cooked chicken, turkey, goose and duck has a shelf life of 2 days in a refrigerator.

Delivery charges

Your delivery charge will be automatically calculated depending on your order value and delivery location and will be shown on the checkout page when you order.  There are minimum order values for delivery which vary depending on the address you want the delivery to be shipped to.  If the you do not see a delivery option when you checkout it is because your order is below the minimum amount for your delivery address OR you have not input the postcode correctly with a space in the middle

Please note: You must input your shipping address postcode correctly with a space in the middle e.g. BT30 9BL so that the software can read your address and show you all the delivery options we offer to your address.

Weight of hams, roasts and poultry

We cut  meat as accurately as possible, but as this is a natural product the weight of the product supplied may vary slightly from the weight ordered. It is impossible for the butcher to be absolutely precise when cutting meat.  

The weight of free range turkeys, geese, ducks and chickens cannot be predicted until the Christmas birds are killed in early December. The final weight of these birds varies from year to year because as they are truly free range, their final weight gain depends very much on weather conditions - a cold, damp November will mean the birds do not gain weight as efficiently as in a warm, dry November and the whole batch of birds will all be a little lighter than required by orders.  We sort all birds by size and allocate them to customers strictly on size requested - no one gets preference and the weight differences are shared among all our customers.  Customers who have paid in advance online will not have to pay more if they are delivered or collect a heavier bird than than purchased. If your bird is lighter and therefore cheaper than you purchased, we will refund the difference between the price of the bird supplied and the price of the bird purchased.  

As hams are a natural product produced from the back leg of individual pigs they vary in size depending on the size and weight of each individual pig.  So naturally when we cut a ham in half, the size of each half ham will not be identical.  Our hams are priced in weight bands with an upper and lower weight range of approximately 500 grams per band, for a fixed price per weight range. We will supply you with a ham that falls in the weight band you paid for, but we cannot supply a specific precise weight. 

How much meat to order

Here is a general guide  - based on average portions.

Turkey - allow approximately 1.5 lbs (675 g per person). For turkeys under 14 lb allow approximately 2 lb (900 g) per portion as the bone to meat ratio is higher for smaller birds.

Goose - allow 2 lbs (900 g) per portion. The biggest geese are only about 11-12 lbs (approx 5.5 kg) so if you need to feed more than 6 people you will need 2 geese.

Chicken (whole, on the bone) - allow 1 lb (450 g) per portion.

Duck - allow 1 lb (450 g) portion.

Pheasant - 1 pheasant feeds 2 people.

Guinea Fowl - 1 guinea fowl feeds 4 people. 

Ham, raw. Order 8 oz (225 g) per portion. This will give you 4 oz (110 g) of cooked ham per portion. Ham loses approximately 1/3 to 1/2 its weight in the boiling process, so if you need 2 kg of cooked meat, you should order 4 kg of raw ham.

Meat on the bone (e.g. Rib Roast) - allow 1 lb (450 g) per portion.

Meat, boned (e.g. Rump roast/Topside Roast/Boned Pork Loin) - allow 8 ounces (225 g) per portion.

Meat boned for casserole (e.g. venison casserole pieces) allow 4 oz (110 g) for a casserole with equal vegetable ingredients e.g. mushrooms, onions, carrots. If the casserole meat is just poached in wine without any additional vegetables allow 8 oz (225 g) per portion.
