Home grown, free range duck from County Down. A delicious Aylesbury type culinary duck, providing delicious lean meat, with not too too much fat but just enough to run out of the duck to cook the roasties perfectly. Game aged, and dry plucked for a delicious crispy skin. Ideal for a celebration or for proper Sunday lunch. Makes a marvellous alternative to a Christmas goose for a couple or small family.
Ducks are oven ready with their giblets removed which are included in a separate bag.
This special product is a quick frozen free range duck which has not been hung, is un-aged and is frozen within 1 day of killing. This will help to reduce the development of histamine in the meat and is helpful for people who are trying to reduce the histamine content of their diet. (As this product has not been hung, it will not be as flavoursome or succulent as our Free Range Ducks which are game hung to deepen flavour and tenderise the meat)
These quick frozen ducks will available for collection at the farm on the following dates

Thursday 22nd December, Friday 23rd December, Saturday 24th December
We will ship these quick frozen birds out in the week from 5th December to 9th December. The last Parcelforce shipment will be Thursday 9th December for delivery on Friday 10th December.

These birds can be delivered by our own driver on Saturday 10th December & Saturday 17th December.
Storage & cooking
To minimise histamine development this product should be kept frozen, thawed quickly and cooked immediately after thawing. Quick cooking (e.g. Pressure cooking) is preferable to slow cooking such as roasting or cooking in a slow cooker.
When cooked it should be eaten immediately, or refrozen as cooked meat immediately - it should not be kept as cooked chicken in the fridge as histamine will continue to develop in cooked meat unless frozen.
