This hams are produced from free range pure wild boar or free range wild boar crossed with free range Tamworth pigs . This breed is called 'Iron Age Pigs' as they are thought to resemble the pigs farmed by Iron Age farmers and shown in cave paintings. The flavour is intense and more gamey than our Free Range Tamworth hams. Please note the rind of the wild boar ham shows the dark hair of the wild boar - this causes no problem as when you cook a ham after poaching the skin is removed and discarded, just leaving the fat layer exposed for glazing.
As hams are a natural product produced from the back leg of individual pigs they vary in size depending on the size and weight of each individual pig. So naturally when we cut a ham in half, the size of each half ham will not be identical. Our hams are priced in weight bands with an upper and lower weight range of approximately 500 grams, for a fixed price per weight range. We will supply you with a ham that falls in the weight band you purchased, but we cannot supply a specific precise weight.
