This hams are made from free range pure wild boar or free range wild boar crossed with free range Tamworth pigs . This breed is called 'Iron Age Pigs' as they are thought to resemble the pigs farmed by Iron Age farmers and shown in cave paintings.  The flavour is intense and more gamey than our Free Range Tamworth hams.  Please note the rind of the wild boar ham shows the dark hair of the wild boar - this causes no problem as during the cooking process after poaching the skin should be removed and discarded, just leaving the fat layer should then be finished with a glaze (e.g. honey & mustard) and then popped in a hot oven for 5 - 10 minutes or so to melt the glaze. 

IMPORTANT INFORMATION: Hams collected or delivered before 19th December will be frozen, hams collected or delivered on the 19th, 20th, 23rd and 24th will be chilled.

preservative sodium nitrite, preservative sodium nitrate, antioxidant ascorbic acid.
