This is a boned leg of venison. The leg has been boned by the butcher to remove the thigh bone which produces an easy to carve roast.
This product has been cut from un-aged, wild venison, which has been butchered and frozen within 3 days of slaughter to reduce the development of histamine. It is suitable if you wish to minimise your histamine intake.
